  • 50ml Brockmans Gin
  • 25ml Tarragon Syrup
  • 20ml Lemon
  • 3 bar spoons Mixed Berries Reduction
  • 25ml Heavy Cream
  • 1 unit Large Egg White
  • 60ml Tonic Water


  1. For the berries, reduce strawberries, blueberries and raspberries in red wine and sugar until they have a pulpy texture
  2. Pour all contents in the shaker
  3. Dry shake vigorously to aerate and create a creamy and beautiful foam
  4. Add ice then shake hard
  5. Double strain into a chilled tall glass to have a fine texture and foam
  6. Also fine strain the tonic water on top
