Pancakes with blueberry & gin compote

In this recipe, we added some Brockmans gin to a delicious blueberry compote.

Ingredients (serves 4)

Blueberry & gin compote:

  • 100ml Brockmans gin
  • Punnet of blueberries
  • 50g sugar
  • Two tablespoons of water

Pancakes:

  • One egg
  • 135g plain flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 130ml milk

  • To make the compote: Pour the Brockmans gin into a saucepan and bring it to a gentle boil. Reduce the heat and add the sugar, stirring until it is completely dissolved. Add the blueberries and let them bubble away until blueberries are softened and beginning to blister. Remove from heat.
  • To make the pancake mix: put the flour and baking powder into a bowl (don’t worry about sifting – who has time to sift!), add one egg and the milk and whisk until the mixture is completely mixed in and has a nice smoothness.
  • To cook: add some oil to a frying pan and get nice and hot. Place a small ladel of mixture into the pan making sure it is spread equally. When small bubbles start appearing all over the top of the mixture it’s time to turn the pancakes over. As the mixture is quite thick it should be nice and easy to turn them over. Cook for one minute on the other side and the pancake should be done. Repeat until you have used all the mixture.
  • Drizzle the compote over the pancakes and serve.
